Farmhouse Bread

3 cups flour
1 1/2 cups warm water
3 tbsp olive oil
1 tbsp dry yeast
1/4 cup sugar
1tsp salt
1 tsp dried rosemary (if desired)
3/4 cup dried cranberries (if desired)

In an electric mixing bowl with a dough hook, combine flour, yeast, salt, rosemary, sugar. Mix until blended. On high settling add one cup warm water, olive oil, then monitor the dough. Slowly pour the remaining half a cup of water in watching the dough carefully to make sure it does not become too sticky. Let the dough kneed for 3-5 minutes in the mixer.
Add cranberries last for a splash of flavor and color.

Remove from the mixer and form a ball by stretching the top of the dough and folding it into the center of the bottom of the ball.

Set in a large lightly greased bowl and cover with a tea towel or plastic wrap. Leave in a warm place. Let rise for 1 1/2 hours.

Remove from bowl and kneed bread into another round ball. place on the greased pan which you have chosen to bake the bread on. Let the bread rise for another half an hour.

Bake in oven at 350F for 20-25 minutes. knock on bread to check if it is done. If it sounds hollow you know its baked to perfection.

Once removed from oven sprinkle with coarse salt and brush with olive oil.
